Step 5 : Make the Salad

Slice the celery and spring onion. Cut lime in half and squeeze. Place all veggies together, add the half portion of chili (spicy), and coriander, add oil, lime juice, a pinch of black pepper, fish sauce, and crush of peanut.

20 g Red Long Chilli
7 g Coriander Leaves
400 g Cauliflower
240 g Tuna Fillet
4 g Homemade Thai Spice
400 g Coconut Milk
100 g Celery
15 g Fish Sauce
10 g Peanut
75 g Lime

Step 1 : Prep the Ingredients

Chop the stalk of the lemongrass, disregard the leaves. Cut the edges of the snow peas. Cut the chili into slices, and chop coriander leaves. ( keep half for salad. Grate the cauliflower using a grater.

Step 3 : Sauté the Cauliflower Rice

Heat a cooking pan with a drizzle of oil over medium heat, Add Thai spice, and Cauliflower rice, season with a pinch of salt, and black pepper cook for 3 minutes. Set aside, Add a drizzle of oil, add the snow peas, season with a pinch of salt, and cook for 3-5 minutes.

Step 2 : Cook the Fish

Meanwhile, heat the frying pan with oil over medium heat. Add the tuna and fry for 4 minutes on each side or until your liking. Set aside.

Step 4 : Simmer the Sauce

Heat a cooking pan with a drizzle of oil. Add the chopped lemongrass, stir for 2 minutes, add coconut milk, and black pepper and simmer for 6 minutes, strain and return the coconut milk, add fish sauce, and simmer for 5 minutes or until thick, add chili (spicy), and coriander.

Step 6 : Serve and Enjoy!

Place the Caulirice on a plate, topped with tuna, pan-fried snow peas, and a side of Thai celery salad
