Step 5 : Make the Salad

Cube cucumber, chop leafy greens and radish, and chop coriander. Combine in a bowl with olive oil, lemon juice, black pepper, and salt.

400 ml Water for Rice
180 g Jasmine Rice
10 g Garlic
7 g Ginger
140 g Yellow Bell Pepper
10 g Spring Onion
40 g Baby Spinach
349 g Tofu
10 g Sambal Oelek
40 ml Soy Sauce
15 ml Toasted Sesame Oil
2 g Mixed Sesame Seeds
80 g Iceberg Lettuce
120 g Cucumber
50 g Red Radish
7 g Coriander Leaves
110 g Fresh Lemon

Step 1 : Cook the Rice

Rinse jasmine rice until water runs clear. Boil salted water in a pot, add rice, cook uncovered for 1-3 minutes, then cover and simmer on low for 12 minutes. Turn off heat when done.

Step 3 : Cook the Tofu

Heat oil in a pan over medium heat, add tofu, and cook, stirring occasionally until golden (about 8-10 minutes).

Step 2 : Prep the Ingredients

Peel and finely chop garlic and ginger. Cube yellow capsicum, chop spring onions into 2cm pieces and cut tofu into bite-sized pieces.

Step 4 : Final Touches

To the tofu, add garlic, ginger, sambal oelek, capsicum, soy sauce, and two-thirds of the spring onions. Cook for 1-2 minutes until fragrant. Add spinach and stir until wilted, then mix in sesame oil and half the sesame seeds.

Step 6 : Serve and Enjoy!

Plate the vegetable stir-fry, and garnish with remaining sesame seeds and spring onions. Serve alongside steamed rice.
