Step 5 : Simmer the Sauce

In the same pan of chicken drizzle oil, add the red onion, and carrot cook for 2-3 minutes, and add the mix of bell pepper, and pineapple. Return the chicken, pour the sweet and sour sauce, simmer for 4-7 minutes, and season with black pepper and salt to taste.

400 ml Water for Rice
180 g Jasmine Rice
7 g Garlic
80 g Red Onion
140 g Carrot
140 g Green Bell Pepper
140 g Yellow Bell Pepper
65 g Pineapple
7 g Spring Onion
1 unit Egg
50 g Corn Starch
20 g White Sugar
30 ml Tamari Soy
50 ml Home Made Vegetable Stock
40 g White Vinegar
50 g Tomato Ketchup

Step 1 : Cook the Rice

Boil water with a pinch of salt in a pot. Wash and rinse jasmine rice, add to boiling water, cook uncovered for 1-3 minutes, then cover and simmer on low for 10 minutes. Remove from heat.

Step 3 : Prep the Chicken

Beat egg in a bowl, season chicken cubes with salt and pepper, and coat in cornstarch.

Step 2 : Prep the Ingredients

Finely chop ginger. Cut red onion into wedges, slice carrot, cube green and yellow bell peppers, and pineapple. Chop spring onions, mix vinegar, ketchup, tamari, sugar, and vegetable stock in a bowl until sugar dissolves.

Step 4 : Pan-fry the Chicken

Heat oil in a pan, cook chicken cubes for 5-7 minutes, then set aside.

Step 6 : Serve and Enjoy!

Serve rice with sweet and sour chicken on top.
