Step 1 : Prep the Ingredients
Preheat the oven to 220°C/ 200°C (fan)/ gas 7. Prepare the ingredients. Smash the garlic and strip the leaves off the thyme, then finely chop them. Peel and thinly slice the red onion.

Step 3 : Pan-sear the Steak
Season beef with salt and pepper. In a hot pan with oil, add steak, rosemary, and garlic, and cook for 4 minutes per side. Add butter, and sear for 1 more minute on each side. Rest before slicing.
Step 2 : Sauté the Onion
Heat a cooking pan with olive oil over medium-high heat. Once hot, add the sliced onion. Sauté for 3-5 minutes or until translucent, add the butter and the thyme. Reduce the heat, add balsamic vinegar, and simmer for 2-3 minutes. Add the white sugar and water, stir, and cook for 10-15 minutes to caramelize.
Step 4 : Make the Salad
Mix sliced fennel, cherry tomatoes, sundried tomatoes, and rocket in a bowl. Add balsamic dressing and top with blueberries.
Step 6 : Serve and Enjoy!
Serve the sandwich with the side salad, finishing with a drizzle of balsamic glaze.
