Step 5 : Make the Salad

Prepare the salad by combining rocket, halved cherry tomatoes, and bite-sized cucumber pieces. Dress with oil, lime juice, salt, and pepper, then toss.

Step 1 : Roast the Peppers

Preheat your oven to 200°C (400°F). Roast the bell pepper on a baking tray for 15 minutes, then let it cool, peel, and remove seeds.

Step 3 : Make the Sauce

Toast cumin, caraway, smoked paprika, chili powder (spicy), and coriander in a pan over low heat for 2 minutes. Let cool. Blend the cooled spices, roasted bell pepper, salt, pepper, garlic, and half the lemon juice in a blender. Gradually add oil to create the harissa sauce.

Step 2 : Roast the Potatoes

Slice the potatoes into halves lengthwise, like French fries. Place on a baking tray, drizzle with oil and add thyme, salt, and pepper. Roast for 40 minutes.

Step 4 : Roast the Chicken

Marinate the chicken with 1/3 of the harissa sauce, the remaining lemon juice, salt, and pepper for at least 20 minutes. Roast the marinated chicken on a baking tray for 15-20 minutes.

Step 6 : Serve and Enjoy!

Serve the roasted chicken and potatoes with the rocket salad and remaining harissa sauce, accompanied by a lemon half.
