Before you start
Preheat the oven to 180 Degrees Celsius or a bread toaster. Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Step 5 : Toast the Bread
Spread garlic butter on each bread slice. Toast in a non-stick pan over medium-high heat for 30 seconds to 1 minute on each side.
180 g Rigatoni Pasta
40 g Beef Bacon
140 g White Onion
10 g Garlic
140 g Carrot
80 g Celery
140 g Red Bell Pepper
240 g Minced Beef
7 g Thyme
1 pc Bay Leaves
100 ml Pasta's Cooking Water
250 g Home Made Tomato Sauce
80 ml Cooking Cream
80 g Home Made Pesto Sauce
135 g White Bread, Sliced

Step 1 : Cook the Pasta
Bring a large pot of salted water to a boil. Once boiling, cook the rigatoni pasta for 8-10 minutes until 'al dente.' Reserve a cup of pasta water before draining.

Step 3 : Sauté the Beef
In a pan over medium-high heat, sauté onion and garlic in olive oil until softened. Brown the beef mince for 4-5 minutes, breaking it apart. Add carrot, thyme, bay leaf, celery, and bell pepper, seasoning with salt and pepper. Sauté for 3-5 minutes.
Step 2 : Prep the Ingredients
Finely chop the white onion, garlic, celery stalk, and half a red bell pepper. Peel and grate the carrot. Strip the thyme leaves.
Step 4 : Simmer the Sauce
Add tomato sauce and reserved pasta water to the pan. Simmer for 10-12 minutes on medium-low heat, stirring occasionally. Add cooking cream and cooked pasta, simmering for 3-5 minutes until the sauce thickens. Adjust seasoning with salt and pepper.
Step 6 : Serve and Enjoy!
Serve the pasta garnished with grated Parmesan and accompanied by the toasted garlic bread.
