In the same pan, sauté the ginger for 30 seconds, then add the carrots and cook for 2-4 minutes. Follow with the red chili (spicy) and snow peas, cook for 2 minutes. Stir in the yuzu, soy sauce, and sesame oil, add the Bok Choy and noodles, and toss for 2-3 minutes.

280 g Beef Tenderloin Strips
2 g Smoked Paprika
5 g Garlic
7 g Brown Sugar
10 g Red Long Chilli
5 g Ginger
200 g Thin Udon
120 g Baby Bok Choy
120 g Carrot
60 g Snow Peas
60 g Yuzu
50 ml Soy Sauce
5 g Ginger (additional ginger noted, ensure this is intentional)
10 g Spring Onion
10 ml Toasted Sesame Oil

Step 1 : Prep the Ingredients

Peel and finely chop the garlic and ginger, slice the red chili (spicy), green peas, and spring onions diagonally, and slice the carrots lengthwise also diagonally. Quarter the Bok Choy after removing its hard base.

Step 3 : Pan-fry the Beef

Boil a pot of water, add the noodles, and cook for 2-3 minutes. Then, drain and rinse them in cold water.
