Step 5 : Bake the Taco Rice

Once the rice is cook transfer to the oven dish and top the black beans remaining corn, and cheeses, and baked in oven for 2-3 minutes.

Step 1 : Prep the Ingredients

Peel and chop the onion, Cut tomato into small cubes. Halve the jalapeno, green capsicum, deseeded, and chop. Finely chop the coriander leaves.

Step 3 : Simmer the Rice

Wash and rinse the rice thoroughly. Pour the vegetable stock, stir in the rice, season with salt, black pepper, bring it to boil, once boiling keep stirring, for 3-5 minutes. Reduce to low heat cover and cook for 8-10 minutes.

Step 2 : Cook the Beef

Heat a cooking pan, over medium-high heat and drizzle oil, once hot, add the beef and cook for 5 minutes. Add the half of onion, tomato, and jalapeno cook for 3 minutes, then add the capsicum and cook for another 3 minutes.

Step 4 : Make the Salsa

Open and drain corn and black beans (wash and rinse the beans) Place the remaining onion, tomato, jalapeno in a bowl, pop the half corn, squeeze the lime juice, add the coriander, season with salt and black pepper.

Step 6 : Serve and Enjoy!

Serve the oven-baked taco rice with a side of salsa and a dollop of sour cream!
