Before you start

Preheat the oven to 180 degrees Celsius. Please wash your hands and rinse all fresh fruits and vegetables prior to cooking.

Step 5 : Cook the Bulgur

In a medium heat pan, drizzle oil and add cumin seeds, letting them sizzle for a few seconds. Add the sliced onion and sauté for 1-2 minutes. Stir in the soaked bulgur, cooking while stirring for 7-10 minutes until soft. Season with salt and black pepper, then mix in the chili (spicy) and mint leaves.

150 g Fine Bulgur
2 g Cumin Seeds
320 g Salmon Fillet
2 g Cumin Powder
2 g Coriander Powder
90 g Red Onion
140 g Red Bell Pepper
4 g Red Thai Chilli
7 g Mint Leaves
20 g Honey
30 g Pistachio Nuts

Step 1 : Prep the Bulgur

Cut the lemon in half and squeeze its juice. Combine the bulgur in a bowl with 2 tablespoons of lemon juice (per person) and the measured amount of water, then let it soak for 10 minutes.

Step 3 : Prep the Ingredients

Thinly slice the red onion and bell pepper, discarding the seeds from the pepper. Remove the seeds from the red Thai chili (spicy) and finely chop it. Finely chop the mint leaves as well.

Step 2 : Marinate the Salmon

Season the salmon with cumin, coriander powder, salt, and black pepper. Drizzle with oil, ensuring it's evenly coated, then set aside to marinate.

Step 4 : Roast the Salmon

Place the marinated salmon on a baking tray, add the sliced red bell pepper, drizzle with oil, and season with salt and pepper. Roast in the oven for 10-12 minutes or until cooked through.

Step 6 : Serve and Enjoy!

To serve, spread the cooked bulgur on plates, top with the crispy salmon, drizzle with honey, and garnish with pistachio nuts and roasted bell pepper.
