Step 1 : Prep the Chicken
Begin by peeling and finely chopping garlic and a banana shallot. In a separate bowl, combine hoisin and soy sauce.

Step 3 : Prep the Ingredients
Peel and julienne the carrot, slice the cucumber and red radish, cut the spring onion diagonally, halve the lime, roughly chop the coriander leaves, and thinly slice the red cabbage.
Step 2 : Cook the Chicken
Heat a frying pan over medium heat and add a drizzle of oil. Once hot, sauté garlic and shallot for 1 minute before adding chicken strips to cook for 4-6 minutes, or until they are browned. Pour the hoisin sauce mixture over the chicken and stir to combine. Add vegetable stock, boil, then reduce heat and simmer for 8-10 minutes until the sauce is reduced.
Step 4 : Cook the Noodles
In a separate pot, bring salted water to a boil. Add soba noodles and cook for 2-3 minutes, then drain and rinse under cold water.
Step 6 : Serve and Enjoy!
Evenly distribute the Hoisin stir-fry chicken noodles onto plates, accompanied by a slice of lime for added zest.
