Step 5 : Final Touches
Meanwhile, heat a cooking pan over medium heat, drizzle oil, add the carrots, and cook for 2 minutes, add the freekeh, season with salt, and black pepper, add parsley, and toss.

Step 1 : Cooking the Freekeh
Wash and rinse the freekeh. Bring salted water to boil using a small cooking pot, and pour the freekeh into the pot, and cook uncovered for 15 minutes. Put the lid on and cook for 10 minutes on low heat once cooked, remove from the heat.

Step 3 : Cook the Kebabs
Thread the courgette, halloumi cheese, and red pepper, onto skewers and repeat. Heat a grill pan over medium heat, once hot drizzle oil, add the kebabs and cook each side for 2 minutes, and place in the oven for 6 minutes. (Keep turning every 3 minutes)
Step 2 : Prep the Ingredients
Cut zucchini into big chunks and bell pepper into a big cubes. Finely chop parsley, peel and grate the carrots, and cut halloumi cheese into big cubes.
Step 4 : Make the Dressing
Peel and roughly chop garlic, chop the spring onion, and cut a lemon in half, and squeeze. Place all in a small bowl, drizzle oil, and season with salt, and black pepper.
Step 6 : Serve and Enjoy!
Serve the kebabs over the freekeh and drizzle the remaining dressings all over the kebabs.
