Add the cooked egg noodles, pac choy, and red chili (spicy) to the pan, stirring for 1-2 minutes. If the mixture seems dry, add a bit of water. Stir in the remaining spring onion, and adjust the seasoning with black pepper and salt.

Step 1 : Prep the Ingredients

Bring a pot of salted water to a boil for the noodles. Peel and finely chop the garlic. Cut snow peas in half lengthwise, baby corn into small slices, carrots into thin slices, and chop the celery, red chili (spicy), and spring onion. Trim and quarter the pac choy.

Step 3 : Cook the Noodles

Wash and rinse the egg noodles. Add them to the boiling water and cook for 2-3 minutes. Drain and set aside.

Step 2 : Sauté the Beef

In a non-stick pan over medium heat, sauté the garlic for 10-20 seconds until fragrant. Add the beef, season with salt and black pepper, and cook for 3-5 minutes until browned.

Step 4 : Pan-fry with the Veggies

To the beef, add carrots and baby corn, cooking for 2-3 minutes. Follow with celery and snow peas. Pour in the homemade chow mien sauce, simmering for 1-2 minutes.

Step 6 : Serve and Enjoy!

Transfer the beef stir fry chow mien to a serving plate, garnishing with spring onion. For an extra zing, squeeze some lime juice over the stir-fry before serving.
