Step 5 : Make the Sauce

Create a herb yogurt by mixing the chopped basil and mint into yogurt, seasoning lightly with salt and pepper.

10 g Balsamic Dressing
2 g Smoked Paprika
120 g Fresh Lemon
1 g Dried Oregano

Step 1 : Marinate the Chicken

Begin by halving a lemon and squeezing its juice into a bowl. Finely chop the garlic. Combine the chicken cubes in a marinade of lemon juice, balsamic vinegar, dried oregano, smoked paprika, chili flakes, salt, and black pepper.

Step 3 : Prep the Ingredients

While the chicken cooks, prepare the salad components. Slice the cucumber and finely chop parsley, mint leaves, and basil.

Step 2 : Roast the Chicken

Preheat the oven and thread the marinated chicken onto skewers. Roast for 15 minutes at 200°C or until thoroughly cooked and no longer pink inside.

Step 4 : Cook the Couscous

Bring vegetable stock to a boil, then pour over couscous in a bowl. Cover and allow to steam for 5-7 minutes, then fluff with a fork. Stir in lemon juice, black olives, chopped parsley, and season with salt and pepper to taste.

Step 6 : Serve and Enjoy!

Spread the couscous on a plate, arrange cucumber slices, and place chicken skewers on top. Crumble feta cheese over the dish and serve alongside the herb yogurt sauce.
