Before you start

Please wash your hands and rinse all fresh fruits and vegetables prior to cooking. Preheat the oven to 180 degrees Celsius.

Step 5 : Simmer the Sauce

In the steak pan, melt butter over medium heat, sauté onions and garlic until translucent. Add sliced mushrooms, thyme, a dash of nutmeg, cook for 3-5 minutes. Deglaze with cranberry juice, then add vegetable stock and cooking cream, simmer until the sauce thickens. Season with salt and pepper.

250 g Button Mushroom
100 g Asparagus
320 g Beef Tenderloin
20 g Butter
2 g Dried Thyme
1 g Nutmeg Powder
50 ml Cranberry Juice
150 ml Home Made Vegetable Stock
50 ml Cooking Cream

Step 1 : Prep the Ingredients

Preheat the oven to 200°C. Bring a large pot of salted water to a boil. Peel and finely chop the garlic and onions. Cut the mushrooms into thin slices and trim off the bottom part of the asparagus.

Step 3 : Pan-sear the Steak

Pat the steak dry and season with salt and pepper. Heat a pan over medium-high heat and sear the steak for 5-7 minutes on each side until desired doneness is achieved. Remove and rest the steak.

Step 2 : Boil the Veggies

Once the water is boiling, add the baby potatoes and cook for 15 minutes. Add the asparagus for 2 minutes before draining. Then, drain the water and set the vegetables aside.

Step 4 : Mash the Potatoes

Place boiled potatoes in an oven dish, gently smash them, add blanched asparagus, drizzle with oil, and season with salt and black pepper. Roast for 7-10 minutes until golden.

Step 6 : Serve and Enjoy!

Arrange crispy potatoes and asparagus on plates. Slice the steak and place it alongside, generously topping with mushroom sauce.
