Finely chop parsley, including soft stems. Add cooked pasta to sauce, simmer for 3-5 minutes, add most of the parsley and black pepper, stir in cream cheese until combined; thin sauce with reserved pasta water if needed

140 g Red Bell Pepper
4 g Cajun Seasoning
100 g Coconut Milk
100 ml Fresh Milk
15 g Cream Cheese
7 g Fresh Parsley

Step 1 : Cook the Pasta

Bring salted water to a boil on medium high heat, then cook penne pasta for 8-10 minutes to your preferred doneness. Before draining, reserve a cup of the pasta water for later use

Step 3 : Pan-fry the Chicken

In a non-stick pan over medium heat with oil, cook chicken for 3-4 minutes per side until golden brown and cooked through. Set cooked chicken aside

Step 2 : Prep the Chicken

Slice chicken breast at an angle; in a bowl, mix panko, parmesan, salt, and black pepper. Dredge chicken slices in the mixture, pressing crumbs in firmly, then set aside on a plate.

Step 4 : Simmer the Sauce

Finely chop garlic and onion; cube half of the red bell pepper. Sauté these in a pot with oil over medium heat for 2-3 minutes, then add Cajun spice and cook for 20-30 seconds. Pour coconut milk and regular milk into the pot, bring to a boil, then reduce heat and simmer for 3-5 minutes

Step 6 : Serve and Enjoy!

Plate pasta, top with cooked chicken slices, and garnish with remaining parsley.
