To the same pan, add vegetable stock, bring to a boil, then reduce heat to medium-low. Stir in cooking cream, and most of the parsley, and season with salt and black pepper, simmering for 5-10 minutes until thick and creamy.

100 g Portobello Mushroom
125 g Button Mushroom
5 g Fresh Parsley
50 g Beef Bacon
280 g Chicken Breast Cubes
150 ml Home Made Vegetable Stock
250 ml Cooking Cream

Step 1 : Cook the Rice

Rinse basmati rice under cold water until clear. In a saucepan with a tight lid, add cold water, rice, and 1/4 tsp salt, bring to a boil, then cover and simmer on medium low for 10-12 minutes

Step 3 : Cook the Chicken

Heat oil in a frying pan over medium heat, add diced chicken, season with salt and pepper, and fry for 8-10 minutes until golden brown and cooked through. IMPORTANT: Wash your hands after handling raw chicken and its packaging. The chicken is cooked when no longer pink in the middle.

Step 2 : Prep the Ingredients

Finely chop white onion, grate garlic, scrape and thinly slice portobello mushroom, quarter button mushrooms, and finely chop parsley and beef bacon.

Step 4 : Sauté the Veggies

To the same pan on medium heat, add the chopped onions and beef bacon and sauté for 1-2 mins, or until the onions are softened and the bacon has rendered. Add the chopped garlic and sauté for 30 seconds. Add the mushrooms and cook for 3-5 minutes.

Step 6 : Serve and Enjoy!

Fluff the cooked rice, and divide it between dishes. Top rice with creamy mushroom chicken mixture, garnish with remaining parsley.
