Before you start

Step 5 : Sauté the Veggies

Chop off the stems of the Brussels sprouts, cut in half. Boil for 2-3 minutes and strain. Heat oil in a pan on medium heat, add the Brussels sprouts, and cook for 2-3 minutes until crisp. Season with salt and pepper.

500 g Potato
120 g Brussels Sprouts
7 g Basil Leaves
280 g Chicken Breast
40 g Beef Bacon
300 g Home Made Tomato Sauce
70 ml Cooking Cream
100 ml Home Made Vegetable Stock
50 g Shredded Mozzarella
10 g Butter
10 g Parmesan Cheese

Step 1 : Prep the Potatoes

Peel potatoes and cut into quarters. Boil in a pot of salted water until tender. Drain, then return to the pot. Mash using a fork. Stir in butter, parmesan cheese, and half of the cooking cream. Continue to stir for 2-3 minutes, adding salt and pepper for taste, until the mixture is smooth and creamy.

Step 3 : Make the Sauce

Finely chop the basil leaves. In a separate pan, mix the homemade tomato sauce, vegetable stock, and the remaining half of the cooking cream. Add 3/4 of the chopped basil leaves. Let the sauce simmer for 3-5 minutes.

Step 2 : Cook the Chicken with Bacon

Season chicken breasts with salt and pepper. Place bacon slices over each breast. Heat oil in a frying pan over medium-high heat. Once hot, add the chicken, placing it bacon-side down. Cook each side for 2-4 minutes until the bacon is golden-brown and crispy. Remove chicken and set aside.

Step 4 : Bake the Chicken

Preheat the oven. In a baking dish, place the cooked chicken breasts. Pour the prepared basil tomato sauce over the chicken. Sprinkle mozzarella cheese on top. Bake in the oven until the cheese is golden and bubbling, approximately 12-15 minutes.

Step 6 : Serve and Enjoy!

Place the cheesy chicken breasts on serving dishes. Spoon any remaining sauce over the chicken. Garnish with the basil leaves. Serve the chicken with a side of creamy mashed potatoes and crispy sautéed Brussels sprouts.
