Step 1 : the Ingredients

Peel and finely chop garlic and onion, cube the zucchini, slice the bell pepper, cut broccoli into florets, and drain the corn.

Step 3 : Pan-fry the Veggies

Add bell pepper, corn, tomato paste, oregano, garlic powder, black pepper, and a pinch of salt. Stir until the tomato paste is well mixed.

Step 2 : Pan-fry the Zucchini

In a pot, heat oil over medium-high heat. Cook onion for 3-4 minutes until translucent, then add garlic and stir for 30 seconds. Add zucchini to the pot, cooking for another 3-5 minutes.

Step 4 : Simmer the Sauce

Pour tomato sauce and vegetable stock into the pot. Once bubbling, lower heat to medium, add penne pasta, and stir well. Place broccoli on top, press down, and cover with a lid and cook for another 5-7 minutes.
