Step 5 : Make the Salad

Cut the cucumber in half lengthwise, then slice it. In a bowl, pick the coriander leaves and add them to the cucumber. Pour in the rice vinegar and add the remaining spring onions. Season the salad with black pepper and salt.

320gr Chicken Breast Cubes
7gr Garlic

160gr Red Bell Pepper
10gr Spring Onion
8ml Soy Sauce
15gr Corn Starch
10ml Toasted Sesame Oil
50gr Homemade Chinese Black Pepper Sauce
140gr Cucumber
7gr Coriander Leaves
10ml Rice Vinegar

Step 1: Cook the Rice

Start by boiling a large pot ofwater with half a teaspoon of salt. When the water reaches a rolling boil, add the rice. Allow it to cook uncovered for 5 minutes. Cover the pot, and let the rice cook for another 15 minutes.

Step 3 : Marinate the Chicken

Cut the chicken into cubes, and marinate them in soy sauce and garlic. Then, lightly dust the chicken with three-quarters of the cornstarch. This will help create a crispy texture when fried.

Step 2 : Prep the Ingredients

Finely chop the garlic, onion, and spring onion. Take a bell pepper, remove the seeds, and cut it into small, even cubes for uniform cooking.

Step 4 : Pan-fry the Chicken

Heat a pan over medium heat, drizzle oil and add the chicken and cook for 5-7 minutes. Add onion, then red bell pepper and cook for 3-5 minutes. Pour the homemade Chinese black pepper sauce. In a bowl, add cornstarch and enough water to dissolve then pour in the pan. Toss until well combined. Drizzle the sesame oil, add the half of the spring onion.

Step 6 : Serve and Enjoy!

Place the rice on a serving plate. Then, add the black pepper chicken. Serve this with the cucumber salad on the side.
