Cooking Instructions


Step 5 : Make the Sauce

For the minty yogurt sauce, finely chop the mint leaves and mix them into the yogurt. Season with salt and black pepper to taste. Stir well to combine the ingredients.

280 g Minced Beef
30 g Panko Bread Crumbs
2 g Smoked Paprika
6 g Home Made Ras Al Hout
120 g Pearl Cous-Cous
140 g Green Bell Pepper
140 g Yellow Bell Pepper
140 g Red Bell Pepper
7 g Fresh Parsley
140 g Yoghurt Full Fat
5 g Mint Leaves
50 g Pomegranate Molasses
20 g Frisee Yellow Holland

Step 1 : Prep the Beef

Put the panko breadcrumbs in a bowl and add 1 tablespoon of water per person. Add minced beef, smoked paprika, ras al hanout spice, and a pinch of salt to the breadcrumbs. Using your hands, thoroughly combine the ingredients. Shape the mixture into 2 sausage shapes per person. Flatten these shapes slightly to form koftas. Carefully thread a skewer through each kofta.

Step 3 : Cook the Veggies

While the couscous is boiling, cut the red, green, and yellow bell peppers into small cubes, and finely chop the parsley leaves. Heat a cooking pan, and drizzle with oil. Once it's hot, add the bell peppers and cook until they are charred. Once the couscous is cooked, mix the charred bell peppers into it, add pomegranate molasses and a pinch of salt.

Step 2 : Cook the Couscous

Next, fill a pot with salted water and bring it to a boil. Add couscous and cook for 7-8 minutes, then check if it's done by tasting it. If it's chewy, let it boil for 1-2 more minutes. Once it's cooked, drain and transfer to a bowl. Fluff the couscous with a fork, then add 1 tablespoon of olive oil (per person).

Step 4 : Grill the Kofta

Heat a grill pan over medium-high heat and add oil. Once hot, place the koftas on the pan and cook for 5-6 minutes on each side. Allow them to rest for a bit after cooking.

Step 6 : Serve and Enjoy!

Divide the couscous mixture onto plates and add frisée on top. Place the beef koftas on the side and serve with a side of minty yogurt.
