Cooking Instructions


Step 5 : Make the Salad

Thinly slice the red onion. Halve the cherry tomatoes. Dice the cucumber and tomato. Chop the romaine lettuce into bite-sized pieces. Toss these vegetables in a large bowl with the kalamata olives, remaining lemon juice, and the leftover herb dressing.

130 g Fresh Tomato

Step 1 : Prep the Ingredients

Preheat the oven to 220°C/200°C (fan)/gas 7. Finely chop the garlic. Chop parsley, basil, and oregano leaves. Halve the lemon and squeeze the juice into a bowl.

Step 3 : Marinate the Chicken

In a large bowl, toss the chicken with the garlic, 1/4 of the herb dressing, and additional salt and pepper. After cooking and cooling, slice the chicken. Reserve the remaining dressing for the salad.

Step 2 : Prep the Dressing

Combine the chopped herbs, half of the lemon juice, honey, olive oil, and a pinch of salt and pepper in a mixing bowl. Stir until well blended.

Step 4 : Roast the Chicken

Lay the chicken pieces on a baking tray. Roast in the oven for 15 minutes, ensuring it’s cooked thoroughly with no pink meat remaining.

Step 6 : Serve and Enjoy!

Slice the avocado. Plate the salad, topping each serving with chicken, avocado slices, black olives, and crumbled feta cheese.
