Step 5 : Make the Sauce

For the raita, grate the cucumber into a bowl. Blend with yogurt, and season with black pepper and salt to taste.

10 g All Spice
1 g Cardamom Powder
320 g Chicken Breast
7 g Garlic
120 g White Onion
120 g Fresh Tomato
140 g Green Bell Pepper
140 g Carrot
80 g Tomato Paste
150 g Basmati Rice
320 ml Water for Rice
1 g Bay Leaves
1 g Cinnamon Stick
1 g Cloves
1 g Ginger Powder
40 g Black Raisins
140 g Cucumber
150 g Yoghurt Full Fat

Step 1 : Cook the Chicken

To marinate the chicken, mix together half the allspice, cardamom powder, salt, black pepper, and a touch of oil. In a heated non-stick pan, cook the marinated chicken for 3-6 minutes on each side or until fully cooked. Remove from the pan and keep warm.

Step 3 : Sauté the Veggies

Warm oil in a pan over medium heat. Sauté the onion and garlic for 2-3 minutes. Stir in the tomato and tomato paste, cooking for 2-3 more minutes. Add the bell pepper and grated carrot, cooking for an additional minute.

Step 2 : Prep the Ingredients

For the vegetables, peel and mince the garlic, thinly slice the onion, dice the tomato, slice the halved bell pepper, and grate the peeled carrot.

Step 4 : Simmer the Kabsa

Stir the rice into the pan. Add water, the rest of the allspice, a cinnamon stick, bay leaf, cloves, and ginger powder. Boil for 1-3 minutes. Season with black pepper and salt. Place the chicken and raisins on top. Cover and simmer for 15-18 minutes.

Step 6 : Serve and Enjoy!

Serve the kabsa chicken and rice with a side of the refreshing raita.
